April 2023 Update: Sola recently debuted a new and improved product line – read my review of their (spoiler alert: DELICIOUS) new products here.
Many have been asking me about Sola Keto Bread and if it is keto-friendly. While I still prefer to make homemade keto bread because of quality control with ingredients, I realize that making bread at home can be a chore and many of us want to be able to grab a slice of bread out of the fridge like before. Which is likely why my Costco Keto Bread review (spoiler, I was not a fan) is one of the most popular posts here. I have been testing the Sola bread for a while now and it is low carb and delicious, however I can’t say it’s 100% keto because it’s primary ingredient is Vital Wheat Gluten. The information that comes with the Sola keto bread loaves when they arrive state that this bread is for “keto transitioners” – and it does make it easier to wean off bread, but because beyond fat loss, one of the benefits of a ketogenic lifestyle is that it helps reduce inflammation in our bodies, which is one of the main causes of many life-altering and often life-threatening diseases.

What is Vital Wheat Gluten?
Sola’s keto bread is made with Vital Wheat Gluten – which is essentially what you have left when wheat is processed and washed away and only the gluten is left, which is what gives bread it’s appealing texture. HOWEVER, there is still wheat protein that comes along with it, which is a key inflammation trigger. So while products with vital wheat gluten aren’t keto-friendly in my opinion, they are significantly lower in carbs and better for you that traditional bread so if it works for you to stick with the keto / low carb diet, I say in moderation – go for it!

Ok, so back to why you likely came here – my review of the keto bread. Sola’s Keto Bread comes in four varieties – Golden Wheat, Sweet Oat, Deliciously Seeded and Sweet & Buttery – all of which are under 3g of net carbs per serving. I got the Golden Wheat version and it’s a great bread alternative. It holds up well when toasting, for sandwiches and even when cooking up grilled sandwiches or french toast. Unlike the powdery texture of other keto breads that leave much to be desired, this is delicious. I had bought two loaves and stored one in the fridge for “bread emergencies” — which is when I’m craving bread and don’t have a fresh loaf of homemade bread on hand.
So, all in all, while no, by my definition, the Sola Keto Bread is not keto-friendly, I don’t think it’s a deal breaker. In moderation and if you don’t suffer from autoimmune disorders that are triggered by gluten, this low carb bread – which you can find at many stores or on Amazon – is a better option that others.
